The birth of the product :

 

With over 40 years of experience in the food service industry and as a certified teacher by MAPAQ, I have to teach to my students the legal standard to cool down food from 60 °C to 4 °C (140 °F to 40 °F) within 6 hours. When staff is storing big quantities of food in the refrigerator, this rule is very hard to respect.

 

Therefore and since many years I am looking to find a better and easier way to correct this situation for food service employees. I have observed water running down the drain from the sink as well as ice melting by the tons, when someone is trying to improve this cooling process. Producing ice is very expensive, considering the energy, water and maintenance costs involved, especially when the colder water is washed down the drain by the running water faucet. During this process many people’s had to wait until the food was cooled sufficiently to store it all away in the fridge before being able to go home, thus increasing payroll unnecessarily . It appeared to me that this was a waste to the environment as well as to the industries cost factors with only minimal effect, especially in the summer, when observing the speed that product was really cooling. When the food was placed directly in the refrigerators, the compressor had to work very hard to overcome the heat from the food, without controlling the cooling process, or the time needed. One other side effect was that the rest of the food in the refrigerator would heat up, thus reducing the average conservation period. Most people are not aware of this potentially dangerous situation and ignore it, not managing it at all.

After a long reflection, I had the chance to built a prototype to validate the idea and it is since been proven that such equipment could work properly performing better than the legal guidelines and responding perfectly to all objectives previously expected and more.

For you to better imagine the product «KOOL-2-FAST», we have presented the technical drawings and descriptions under the page «technical data sheet» above on the left. We have now produced 3 different models and a fourth one is under way for commercial defrosting.

 

List of advantages to your operations and some technical details:

 

  • The covered inserts are standard to cool down food without transferring. Without the inserts wrapped food could be immerged directly in the water to defrost over night or cooled down after «sous-vide» cooking. Pales can also be cooled down before storing in the refrigerator. All food can be stored without time limit, since the water temperature is always maintained between 1.5 °C (34.7 °F) à 2.5 °C (36.5 °F) and  respecting all laws and regulations (MAPAQ, SERVE SAFE®, HACCP, etc).
  • The «KOOL-2-FAST» equipment has a work table incorporated on top of the compressor in order to work with fragile products that need continuous refrigeration during transformation. This is permitting to work on a product without the going back and forth to the refrigerator during operations. A fragile product could be left on ice-water for a while in a safe environment while doing something else.
  • Food can be kept for long periods of time in a safe environment permitting to serve as a cold table or even buffet table during any lengthy service, eider in the kitchen, banquet halls or even restaurants. All food left over night is safe as well, saving payroll for moving food around during opening and closing of operations.
  • The height of the «KOOL-2-FAST» equipment for pales and insertions is lower as regular tables and sinks to make loading and unloading easier and to help prevent work related accidents. The ice water bath «KOOL-2-FAST» for bags is about 40'' (1.015 m) high to have more water allowing to cool down faster.
  • To absorb the water, overflowing when loaded, the «KOOL-2-FAST» is equipped with a overflow holding tank and drain to avoid the water level changing too much during loading. It is situated all along the back wall to avoid waves and water spillage on the floor. When unloading, the missing water is immediately replaced with an automatic water level switch. This feature permitting to prevent water from running all the time (savings to: the environment or money if you are on a water meter or a well). This function can be stopped when unloadung in order to keep the cold water, knowing you will reload with hot food again. The water in the summer is warmer and if you let the water in, replacing the unloaded volume, you would have to wait to cool it down priot to reload, if the inlet is stopped, the level will raise again when loading fresh product to cool.
  • During banquets or buffets, food can be left in the «KOOL-2-FAST» for longer service hours, since holding temperatures are always guaranteed.
  • This standard «KOOL-2-FAST» (with 4 inserts), is 84 inches (2.13 m) long, 30 inches (76 cm) wide and 34 inches (86 cm) high. Should you need any other size, we could make them in any length, width and height to correspond to your needs.
  • The «KOOL-2-FAST» is on wheels and can be displaced to serve in other areas of your food service (buffets, banquets, assembly lines, manufacturing plants, etc.). Should you need a permanent installation, the wheels could be removed.
  • The personalized version of your «KOOL-2-FAST» is also available and could be tailored exactly to your needs. The widths, the lengths and the deepness could be adjusted to your personal needs of your operations.

 

Installation :

 

The «KOOL-2-FAST» comes ready to plug in (electricity and plumbing) at your premises. Your local installation is not included (drains, water inlet and 1 or 2 electrical plugs of between 110V/15A up to 208-240V/50A, depending on the model. We supply a water in connection as per your specification. The drain is 1 1/2'' inch pipes over an open floor drain, min. 12''X12'' WITH A 3'' pipe, with 2 independant valves for the overflow and for the main waterbath. The electrical comes with 8-10 feet (2.4-3 m) standard wiring and standard plugs for betwenne 110 V/15 A to 208-240 V 50 A plug (6-50 P, standard dryer plug) for America and 220V/15 A up to 240V/50 A for Europe. The bigger bath uses a 208 V 1PH 50A plug. Any other set up will be evaluated by our engineers, but many possibilities for other standards are easily possible.
