The birth of the product :
With over 40 years of experience in the food service industry and as a certified teacher by MAPAQ, I have to teach to my students the legal standard to cool down food from 60 °C to 4 °C (140 °F to 40 °F) within 6 hours. When staff is storing big quantities of food in the refrigerator, this rule is very hard to respect.
Therefore and since many years I am looking to find a better and easier way to correct this situation for food service employees. I have observed water running down the drain from the sink as well as ice melting by the tons, when someone is trying to improve this cooling process. Producing ice is very expensive, considering the energy, water and maintenance costs involved, especially when the colder water is washed down the drain by the running water faucet. During this process many people’s had to wait until the food was cooled sufficiently to store it all away in the fridge before being able to go home, thus increasing payroll unnecessarily . It appeared to me that this was a waste to the environment as well as to the industries cost factors with only minimal effect, especially in the summer, when observing the speed that product was really cooling. When the food was placed directly in the refrigerators, the compressor had to work very hard to overcome the heat from the food, without controlling the cooling process, or the time needed. One other side effect was that the rest of the food in the refrigerator would heat up, thus reducing the average conservation period. Most people are not aware of this potentially dangerous situation and ignore it, not managing it at all.

After a long reflection, I had the chance to built a prototype to validate the idea and it is since been proven that such equipment could work properly performing better than the legal guidelines and responding perfectly to all objectives previously expected and more.

Installation :
The «KOOL-2-FAST» comes ready to plug in (electricity and plumbing) at your premises. Your local installation is not included (drains, water inlet and 1 or 2 electrical plugs of between 110V/15A up to 208-240V/50A, depending on the model. We supply a water in connection as per your specification. The drain is 1 1/2'' inch pipes over an open floor drain, min. 12''X12'' WITH A 3'' pipe, with 2 independant valves for the overflow and for the main waterbath. The electrical comes with 8-10 feet (2.4-3 m) standard wiring and standard plugs for betwenne 110 V/15 A to 208-240 V 50 A plug (6-50 P, standard dryer plug) for America and 220V/15 A up to 240V/50 A for Europe. The bigger bath uses a 208 V 1PH 50A plug. Any other set up will be evaluated by our engineers, but many possibilities for other standards are easily possible.
